Valentine’s Day is around the corner! When I think about Valentine’s Day, I think indulgence. And when I think indulgence, I think pasta.. and CHOCOLATE.
In the past few years, my boyfriend has made a reservation at a fancy restaurant for V-Day- which is AWESOME for a food lover like me, but this year I am opting to save the dough and prepare a big fancy meal for ourselves at home.
So, I’ve scoured the internet and found some great recipes that look amazing to make on V-Day, and wanted to share them here just incase you’re in the same cooking spirit!
To finish off a lovely feast, this chocolate pudding is a perfect end to your meal (or really on any day). It only took about 15 minutes to prepare, and toppings are limitless! I chose to go with raspberries and chopped almonds.
Chocolate Pudding for Two
Dark chocolate, melted 2 oz.
Heavy cream 12 oz.
Yolks 2
Salt ¼ tsp
Cocoa powder 2 tsp
Sugar 2 tsp
Directions:
In a small sauce pot, heat cream, sugar, salt, and cocoa powder on medium high.
Put yolks in a small separate bowl. Melted chocolate goes in a medium size bowl.
Whisk cream mixture so sugar and cocoa powder are melted into cream. Once cream is warm, pour a little bit of the hot cream into the yolks and whisk. Pour those whisks back into the hot cream mixture and cook the yolk/cream mixture until thick, about 3 minutes.
Pour cream/yolk mixture over melted chocolate and whisk until combined.
Pour chocolate pudding into two ramekins and chill for 2+ hours or overnight.
Garnish with fresh fruit, chopped almonds, whipped cream, chocolate shavings, whatever you’d like!
