Blueberry Banana Bread

 

Happy Labor Day friends! I hope everyone is enjoying these last few days of summer before the cool weather returns!
I know I’ve said this before and I’ll say it again; I love bananas. I love eating them raw, frozen and dipped in chocolate, blended into a smoothie, and especially baked into a loaf. A few months ago, I was at a restaurant where they had a banana blueberry dessert on the menu. Of course I had to try.. and yes it was delicious. I never really thought about combining the two fruits before but unsurprisingly they go very well together. Since then, I’ve been adding blueberries to my banana smoothie and today I’m putting them into my favorite banana bread! This banana bread recipe was handed down from my Grandmother to my mom, and my mom to me. I’ve tweaked it just slightly, incorporating compatible flavors here and there. Chocolate-banana was my first go-to combination, but blueberry-banana may just be my new favorite.

Blueberry Banana Bread
Yield 1 loaf
Oil 1/3 cup (2.3 oz.)
Sugar 2/3 cup (5 oz.)
Eggs 2
Banana, mashed 1 cup (2 bananas)
Salt ½ tsp
Baking soda ¼ tsp
Baking powder 2 tsp
Flour 1 ¾ cup
Blueberries 1 cup (+1 T flour)
Vanilla extract 2 tsp
 
Directions:
Preheat oven to 350 degrees F (176 C).
Toss the fresh blueberries in 1 T flour. This will prevent the blueberries from sinking to the bottom of the loaf. Set aside.
In a standing mixer, combine oil and sugar and mix on medium speed. Add eggs, scrape down sides. Alternately add wet and dry ingredients until thoroughly combined. Fold in blueberries with a rubber spatula.
Grease a loaf pan and pour in batter.
Check loaf after 40 minutes of baking. If a toothpick inserted comes out clean, you’re good to go! Remove from oven and let it cool.
A tip to keep loaf perfectly moist: Immediately wrap baked loaf in plastic wrap and place in the fridge. Wait 8+ hours to slice into it.

  • 1 cup mashed banana (2 bananas)
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 1 3/4 cup flour
  • 1 cup blueberries (+1 T flour)
  • 2 tsp vanilla

Instructions
 

  • Preheat oven to 350 degrees F (176 C).
