Banana Bread Mug Cake

I’ve been trying to keep myself busy, making sure I do something productive every day. Making sure I don’t waste my day just watching tv or something. I’m thankful I have this blog to keep working on recipes that will keep my creative brain working. It’s finally April! Is it just me or did March feel like it dragged on forever? We are in week 3 of quarantine and who knows how much longer we have to go! I’m so used to my routine and I’ve made some rules for myself to follow during this time. After I wake up, I’ll do whatever errands I have to do first (if any), then I’ll do some recipe testing/blog work for a few hours. I usually go on a long walk around noon and eat lunch after I’ve returned. Then I’ll do laundry or clean something. Then i can turn on the tv and relax. It’s a lot less activity than I’m used to, but it’s all I’ve got right now!

This banana bread mug cake is perfect for quarantine. It literally bakes in 1 minute and you’ve likely already have all the ingredients in your pantry. All you need to do is mix the ingredients together and bake it in the microwave. I’ve added chocolate chips to the recipe, but feel free to omit or replace with chopped nuts or something! And top with some caramel or ice cream if you’ve got it!

Banana Bread Mug Cake

Yield 2 cakes

Banana 1

Flour ¼ cup

Brown sugar 3 T

Oil 1 T

Baking powder ¼ tsp

Baking soda ½ tsp

Egg 1

Cinnamon ¼ tsp

Chocolate chips 2 T

Directions:

In a medium size bowl, mash banana first. Add in all remaining ingredients (except for the chocolate chips) in no particular order and whisk or mix with a fork to combine. Add chocolate chips last.

Spray 2 mugs with non stick baking spray and divide the batter between both mugs. The cake with rise so don’t worry if it seems too little.

Microwave mugs separately for 60 seconds. Touch the top of the cake and if it springs back it is done. If not, microwave for 30 seconds longer.

Carefully remove mug from microwave it may be really hot! Top with caramel, chocolate or ice cream and enjoy!

    I make these and added chopped walnuts and topped them with a scoop of Straciatella Gelato which contains chocolate chips! Quick and Delicious Saura.
