Matcha Sugar Cookies

Happy August! August is great because not only is it MY birthday month it is also my fiance’s and his mothers, so we all celebrate together. This year we’ll just be celebrating at home, but I honestly like that just as much. I love cooking a nice meal for family, making a cake, and just the planning involved. I seem to always have food on my mind, and I’m not sure if that’s a good thing or bad? We’ll just say it’s a good thing.

If you are a green tea fan, these cookies are for you. They’re soft and chewy like a good chocolate chip cookie, with a punch of matcha flavor. These cookies are so easy to make, and you can easily find some matcha powder on amazon. Matcha green tea powder is always in my house because you never know when a green tea latte sounds good!

I am so excited it’s the weekend. I have been so busy with work and other projects lately. This weekend I have no obligations, just to relax and hang out with my fiance. We are going to look at wedding bands, a new desk, some bathroom tile, and maybe binge watch something on netflix. I wish you all a happy August and happy weekend!  

Matcha Sugar Cookies

Yield 20 cookies

Flour 2 cups

Matcha Powder 2 Tbsp.

Salt ½ tsp

Baking Soda ½ tsp

Butter 1 cup

Sugar 2/3 cup

Powdered Sugar ¾ cup

Egg 1

Vanilla 1 tsp

For Rolling:

Sugar ½ cup

Matcha Powder 1 tsp

Directions:

In a stand mixer fitted with a paddle attachment, cream butter and sugar and powdered sugar together. Add in egg, then vanilla, then dry ingredients. Scrape down sides as needed.

Preheat oven to 350 degrees Fahrenheit. Combine sugar and matcha powder in a small bowl for rolling the dough in. Line 3 sheet trays with parchment paper. Scoop 1 oz sized balls of dough, roll them in matcha sugar, then place on sheet tray about 3 inches apart from eachother. Continue to do this with the rest of the dough. Bake for 10 minutes and let it cool at room temperature. Enjoy!
