Gingerbread Pancakes

Gingerbread flavored pancakes!
Servings 8


  • 1 1/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/8 tsp cloves
  • 1/8 tsp nutmeg
  • 1/4 cup sugar
  • 2 Tbsp molasses
  • 4 Tbsp melted butter
  • 3/4 cup milk
  • 2 eggs
  • powdered sugar or maple syrup


  • Preheat a griddle pan or griddle to medium heat.
  • In a medium size bowl, combine all dry ingredients (flour, salt, spices, leavening).
  • In another medium bowl, combine all the wet ingredients (sugar, milk, molasses, eggs, melted butter)
  • Now, combine wet with dry- and do not overmix! You want this batter to be nice and clumpy, makes for fluffier pancakes!
  • Next step, spray your nonstick griddle pan with some cooking spray, and spoon or scoop ¼ cup of batter on. These should a few minutes (about 2-3 minutes) on the first side. Once the edges appear to be cooked, flip over with a flat spatula, and cook for 1 more minute. Continue to do this until you’re out of batter.
  • Stack as desired, cover in butter, maple syrup, powdered sugar – OR ALL THREE! Enjoy!
