Preheat a griddle pan or griddle to medium heat.
In a medium size bowl, combine all dry ingredients (flour, salt, spices, leavening).
In another medium bowl, combine all the wet ingredients (sugar, milk, molasses, eggs, melted butter)
Now, combine wet with dry- and do not overmix! You want this batter to be nice and clumpy, makes for fluffier pancakes!
Next step, spray your nonstick griddle pan with some cooking spray, and spoon or scoop ¼ cup of batter on. These should a few minutes (about 2-3 minutes) on the first side. Once the edges appear to be cooked, flip over with a flat spatula, and cook for 1 more minute. Continue to do this until you’re out of batter.
Stack as desired, cover in butter, maple syrup, powdered sugar – OR ALL THREE! Enjoy!
