Banana bread with fresh blueberries!

Blueberry Banana Bread

  • 1/3 cup canola oil
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed banana (2 bananas)
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 1 3/4 cup flour
  • 1 cup blueberries (+1 T flour)
  • 2 tsp vanilla


  • Preheat oven to 350 degrees F (176 C).
  • Toss the fresh blueberries in 1 T flour. This will prevent the blueberries from sinking to the bottom of the loaf. Set aside.
  • In a standing mixer, combine oil and sugar and mix on medium speed. Add eggs, scrape down sides. Alternately add wet and dry ingredients until thoroughly combined. Fold in blueberries with a rubber spatula.
  • Grease a loaf pan and pour in batter.
  • Check loaf after 40 minutes of baking. If a toothpick inserted comes out clean, you’re good to go! Remove from oven and let it cool.
  • A tip to keep loaf perfectly moist: Immediately wrap baked loaf in plastic wrap and place in the fridge. Wait 8+ hours to slice into it. Enjoy!
