Chocolate Snowballs

It’s Christmas time baby! You know what that means right? COOKIES! Just kidding, well it is about cookies, but it’s more than that. Holidays are the best time of year because it’s about being with your loved ones. I get more into it each year because I LOVE celebrating with my loved ones. I love planning out a family dinner, finding cute little stocking stuffer treats, and this year my boyfriend and I got our very first tree. (if you could see my face, I’m grinning ear to ear right now). But really- holidays are the best, and I feel so grateful to be in the place i am in life right now. 

I haven’t been posting recipes as often as i normally do- and I apologize, November was a hectic month for me and then on top of that my website semi crashed for a couple days and it took me a few MORE days to figure that out! Jeez- technology, am i right? Anyway- I’ve got a great easy cookie recipe to share with you all today. Think Mexican wedding cookies only chocolate! These cookies are so tender they basically melt in your mouth. And just in case you were wondering- calories don’t count during the holidays. Facts. 

Chocolate Snowballs

Yield 20-30

Butter 1 cup

Powdered sugar ½ cup

Cocoa powder ¼ cup

Vanilla 1 tsp

Salt ½ tsp

Flour 2 ¼ cup

Water 2 Tbsp.

Powdered sugar 1 cup

Directions:

Preheat oven to 325 degrees F.

In the bowl of a stand mixer, cream butter and powdered sugar together with a paddle attachment. Add in dry ingredients and water last. Scrape down sides if needed.

Line 2 cookie sheets with parchment. Use a 1 ounce cookie scoop or scoop balls with a spoon. Roll them around in your hands to create a round ball shape.

Freeze cookies on sheet for 10 minutes.

Bake cookies for 15 minutes.

Cool cookies on pan for 10 minutes. Place 1 cup of powdered sugar in a bowl and roll cookies in powdered sugar. Once rolled, put cookies back on cookie sheet and cool completely, about 1 hour.

Melt in your mouth chocolate snowballs
Servings 20 cookies

  • 1/4 cup cocoa powder
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 1/4 cup flour
  • 2 Tbsp. water
  • 1 cup powdered sugar (for rolling afterwards)

Instructions
