Chocolate Banana Bread with Cream Cheese Swirl

Happy New Year Fam!

I rang in the new year in Los Angeles, hanging with my dad and step family- eating at all the new eateries out there. One of my favorites of which was a place in Venice called Gjelina… YUMMM. Lots of vegatables dishes, pizzas, burrata EVERYTHING, and of course- desserts (for research, right?). Check out their cookbook if you ever get the chance! I think I left that restaurant 5 pounds heavier than when i came in. No regrets.

Now that I’m back home in Denver (and back in the cold) I am really missing that lovely sunny weather!

Jan 2nd, when everyone goes back to work, what better way to start this short work week than with a little chocolate banana bread to get you through it? Inherently moist(sorry not sorry), not overly sweet, easy as pie – this can be whipped up with ingredients you’ve probably already got in your pantry. Plus, the baked in cream cheese swirl is like a little complimentary tangy note on each and every bite. Let’s just ease our way back from the passing holiday, shall we?

Chocolate Banana Bread

Oil 2.5 oz.

Sugar 5 oz.

Eggs 2

Banana (mashed) 8 oz. (2 bananas)

Salt ½ tsp

Baking Soda ¼ tsp

Baking Powder 2 tsp

Flour 7 oz.

Cocoa Powder 1 oz.

Cinnamon 1 ½ tsp

Cream Cheese Swirl

Cream Cheese, room temp. 5 oz.

Egg 1

Sugar 2 oz.

Flour 2 T

Directions:

Preheat oven to 350 degrees F (176C).

Start by making the cream cheese swirl. Mix the cream cheese and sugar together until there are no clumps. Whisk in the egg, and the fold in the flour until smooth. Put into a piping bag and set aside.

Next, make the chocolate banana bread.

Sift together flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.

In a standing mixer fitted with a paddle attachment, combine oil and sugar. Add eggs, one at a time until well combined. Next, add mashed banana. Lastly, add flour mixture. Mix until there are no clumps remaining.

Pour into greased loaf pan (9”x5”).

Next, pipe the cream cheese mixture into the chocolate banana batter. Swirl with a toothpick, or a knife.

Bake for 50-60 minutes, or until a toothpick inserted into the middle comes out clean.

For best texture and to keep moist, cool completely before cutting open. Enjoy!
