Caramel Apple Pie

It’s officially pie season. What to bring to your cousins Halloween party? Your Grandma’s Thanksgiving dinner? Your co-workers friends-giving night? I got you covered. I vow to give you all the fun pie/ handpie/ tart/cheesecake options you’ll need to show up with something fantastic.
To start it off, I’ve mashed a few classic fall flavors together into a slice of pie you can eat like a cookie. Seriously a slice of this may be easier to eat with your hands than with a fork (because of the caramel). Don’t worry, holidays aren’t for judgement, just family and good food.
If you like chewy caramels and apple pie, then this match is for you. You can make this and serve it within a few hours. Or make ahead, just let the pie come to room temp before serving for best results!

Caramel Apple Pie
Crust
Butter, melted 5.5 oz.
Graham crumbs 10 oz.
 
Caramel Layer
Butter 3.5 oz.
Brown sugar 3.5 oz.
Sweetened Condensed Milk 1 can
Apple Layer
Apples 4 (I used granny smith)
Brown Sugar 4 oz.
Sugar 2 oz.
Lemon Juice 1 oz.
Cornstarch 2.5 T
Salt ½ tsp
Cinnamon 1 tsp
 
Directions:
Preheat oven to 350 degrees F. Spray a springform pan with baking spray.
Mix melted butter into the graham crumbs and press into springform pan, with the sides going about 1 ½ inches up the side.
Bake for 15 minutes.
Next, start the caramel layer. In a heavy bottom sauce pot, heat together butter, brown sugar, and sweetened condensed milk. Keep mixing with a spatula as to not burn. Cook for 10-15 minutes or until mixture turns a caramel color. Pour into shell and chill.
For the apple layer, peel and slice all apples. Mix in a bowl with remaining ingredients, then place into a pot. Cook on medium high heat until apples are cooked down. Layer on top of caramel. Cool down for 3-4 hours.
Serve at room temperature!

Ingredients
  

Crust

  • 5.5 oz butter, melted

Caramel Layer

  • 3.5 oz brown sugar
  • 1 can sweetened condensed milk

Apples

  • 4 apples, peeled and sliced
  • 4 oz brown sugar
  • 2 oz sugar
  • 1 oz lemon juice
  • 2.5 Tbsp. cornstarch
  • 1/2 tsp salt
  • 1 tsp cinnamon
